The Ultimate Apple Cake

If you're going to eat just one apple thing this fall, make it this cake. This is an old family recipe that I grew up on, and I pretty much bake them back to back all October. In fact, I have one in the oven right now.

Preheat oven to 350.
Stop! Do you have an Angel Food/tube cake pan? Cause you're gonna need one.

Slice and peel 5-6 apples
mix with 5 TBS sugar & 2 TSP cinnamon and set aside.

In a second bowl mix:
3 cups flour
1 cup oil
2 1/4 cups sugar
4 eggs
1/2 tsp salt
1/2 cup OJ
2 1/2 TSP vanilla
3 TSP baking powder

Layer batter, apples, batter in pan and bake for 1.5 hrs. Now this is tricky, because if you bake it a minute too long you're done. So check it at 1 hr 20 mins just in case.
Now I now what you're thinking - Holy sugar, oil and eggs. And baking powder. No worries, this cake is huge, so it all evens out, right?

For maximum deliciousness, try with scoop of vanilla ice cream while warm.
